While the days are getting shorter, farmers' markets and grocery
stores are still well-stocked with late summer Ontario produce.
Stuffing meat or poultry is a clever way to get more fruits and
vegetables onto your dinner plate. This chicken dish, for example,
is replete with zucchini and sweet red peppers as well as chopped
peaches, all wrapped up in one neat bundle.
Peppers, zucchini and peaches are all high in vitamins A and C, two
key vitamins for warding off infections and protecting the health of
your cells. The trio of produce also contains fibre, helping you feel
full and improving digestive health.
Zucchini is also a wonderful source of potassium, which ensures
proper function of muscles and nerves. The bold red of peppers
is created by capsanthin, which can improve eye functionality.
Peaches are not only tasty but contain magnesium, which is
necessary for bone formation.
This entrée is easy to assemble, and the delicious mix of fruit and
vegetables adds levels of flavour and interest to the lean, brain-
healthy protein.
